Happy Easter(ok… it’s a bit late)! To celebrate, I have created a recipe for homemade cookie dough and even made truffles. These are super easy and my first no-bake recipe. This recipe has the full-fat goodness of cookie dough. Of course, there are quite a few substitutes you could do to make it slightly healthier.
You start off the same way you start nearly any cookie recipe. With butter or margarine. Cream 1/4 cup of butter with 1/4 cup brown sugar and 1/4 cup of granulated sugar with a spoon in a medium bowl.
Next, add in your 1 1/2 teaspoon of vanilla extract and 1/4 cup of applesauce into your bowl. Mix well.
Slowly, add in 1/2 teaspoon salt and 1 cup of flour (it is easier to do this by adding 1/4 of a cup at a time). If you decide to use a different flour, I especially recommend stirring in 1/4 a cup at a time until it reaches the consistency you prefer.
Once doughy, stir in 1/2 cup of mini or regular chocolate chips to have chocolate chip cookie dough. To make them truffles, go here.
Some variations you could make are the following:
M&M cookie dough- Instead of chocolate chips, add M&Ms for a crunchy cookie dough
Gluten-free cookie dough- A wonderful flourless cookie dough recipe can be found here.
Peanut butter cookie dough- Rather than creaming together butter and sugar, attempt to cream 1/4 cup of peanut butter or your favorite nut butter with the sugar. Also, maybe consider trying to add in candy bits instead of chocolate chips.
Healthier cookie dough- Attempt to either use a butter substitute or peanut butter and cream with sugar (If you try this with a sugar substitute please let me know how it turns out). Continue recipe and (if you’d prefer) use whole wheat flour instead of all purpose flour. Results will be slightly less creamy and sweet. If you do not want to use chocolate chips, I highly recommend carob chips although I can not promise they are any healthier. I do not have much experience with the whole healthy baking thing so if you know of a better healthier cookie dough adaptation from this recipe, please let me know.
