Cheesy Potato Bake

Tonight was the perfect opportunity to finally post a main meal, my family’s dinner tonight. So I searched Pinterest for inspiration and found it really wasn’t helping as I continued to get distracted (ooh! look a new doctor who joke…) and finally was about to give up when I realized we had a hell of a lot of extra random potatoes lying around in our kitchen. What better to make then some sort of potato experimental casserole? Can’t be too bad…

So I took about 4 lbs worth of potatoes and sliced them on the thin side.

This is about 1/3 of the amount of potatoes I ended up using.

Then I put a pot of water with a pinch of salt on heat to boil the potatoes in. Meanwhile, I took a 1 pound roll of sausage and stuck it into a pan and stirred it occasionally until it was fully cooked.

About now the water should be boiling so go ahead and drop your thinly sliced potatoes into the boiling water. Cover and let cook until tender or for about ten minutes. While waiting for the potatoes, I made a 2 recipes worth of bechamel sauce(recipe here). If you would prefer another type of sauce (or even a canned one) go ahead and make it and add it to the cooked sausage until it looks like this:

I added some parsley into my meat sauce. About this time, or possibly before you finish the sauce, the potatoes will be tender. Drain the water and let the potatoes cool slightly. Then, spread around half of the potatoes into the bottom of a casserole dish.

Now take the meat sauce and spread that over the potatoes…

And spread the rest of the potatoes on top…

Sprinkle with around 1/2 cup of shredded cheese and stick in the oven.

Let it cook until the cheese is crispy and the bake heated throughout, around 20 minutes at 350*. Sprinkle parsley on top to serve.
