Hello! I has been a tad too long since the last time I posted a breakfast recipe. Knowing that, I created these delicious banana chocolate chip pancakes. These pancakes were perfect. They were very banana-y, but you could still taste the buttermilk pancake while being chocolate heaven. In total, a fluffy, sweet banana breakfast. I hope you like it as much as I did.
Before anything, please mash your single banana into a mushy substance with little chunks.
Then, whisk 1/2 cup flour, 1/2 teaspoon granulated sugar, 1/2 teaspoon brown sugar, 1/8 teaspoon salt, 1/4 teaspoon baking powder and 1/2 teaspoon baking soda together in a small to medium bowl.
Mix in 1/4 cup of applesauce and 1/2 cup buttermilk (or 1 teaspoon lemon juice mixed with almost 1/2 cup of milk. Let this sit out for 15 minutes before using for best results).
Mix in banana, then stir in chocolate chips.
Heat frying pan to medium low heat, add some butter and pour some batter on pan.
Let sit until bubbles are forming, and flip.
Makes about 4 medium pancakes.
