Fried Cheese-stuffed Zucchini Blossoms

Hello! 🙂 Before this recipe, I had never heard of zucchini blossoms. Due to the amazing witchcraft of the internet, me and my Granny put together probably one of the most scrumptious and also most unhealthy meals (with how many you eat, it becomes a meal) of fried, cheese-stuffed zucchini blossoms. But it was worth every last bite.

We made these for when my grandpa came home, but unfortunately for him, most of them were devoured the second they came out of the pan.

Let the deliciousness begin! 😛

To begin the process of these beauties, chop up one shallot (or green onion) and 1 tablespoon basil.

Goat cheese!

In a bowl, combine 1/3 cup goat cheese, 2 tablespoons heavy cream, some salt and pepper. (Although my granny and I used a goat cheese/cream cheese mixture, any low-fat white cheese should do.)

Mix in the heavy whipping cream

Keep on mixing, keep on mixing

Add the basil and shallot/green onion.

And mix!

Mix it up!

Spoon filling into 8-12 blossoms and twist the top to seal. (If you are unfamiliar with zucchini blossoms, the ones with a thick stem are considered ‘female’ blossoms and the thinner stem ‘male blossoms’. The female ones are fantastic, because not only do you get fried cheese stuffed blossoms, but mini fried zucchinis as well.)

In heavy-bottom saucepan, fill 1/3 full with oil. Dip blossoms into batter, then into the oil.

and fry!

Fry 1-2 minutes until golden and drain on paper towels.

Yummy in my tummy!
