Vegetable Scramble

Hello everyone. Today is my first day posting with a recipe, so I hope everyone enjoys. Again, I love advice so if you have any please let me know. This is just a simple breakfast that can be made within ten minutes. It’s really simple and you can adapt it to fit whatever vegetables you have and enjoy. My personal favorite is a spinach, mushroom eggs scramble with a touch of cheese but if you don’t really like that, feel free to change it how you’d like.

First off, take  your vegetables and chop them up into bite-sized pieces.

Chopped onions

In this example I am using onion and spinach and used about 1/4 of an onion and a handful of spinach for around 3/4 to a cup of vegetables for every 2 eggs, but if you prefer more or less eggs, feel free to change as needed.

Melted butter

Next, melt around 1/2 tablespoon of butter in a pan on low heat.

Add vegetables

After it is melted, add your vegetables to the pan and give it a stir. Also, add 1/2 tablespoon of garlic if wanted.

Meanwhile, mix 2 eggs in a bowl.

Continue to mix your vegetables until the onions look yellowed and the vegetables cooked.

Time to add the eggs!

Let it sit for a minute to set slightly, then cook as if you were making scrambled eggs, stirring occasionally.y

Stirring once again... :)

Continue to stir and add in a sprinkle of salt and pepper.

Cooked through...

Once the eggs are cooked all the way through, they are ready to be eaten! This is also the time to add in cheese if you would like. 🙂 Pour onto your plate and voila! Feel free to eat as is or throw into a tortilla to create a delicious breakfast burrito.
